If you have followed recent trade news about Ecuadorian shrimp and China, you have seen the words sodium metabisulfite more often than anyone expected. The obvious question follows: is this compound dangerous? The short answer, supported by every major food safety authority, is no — not at regulated levels. Here is the science, clearly explained.

What it is

Sodium metabisulfite is an inorganic salt with the formula Na₂S₂O₅, registered as food additive E223. It belongs to the sulfite family, preservatives humanity has used since Roman winemakers burned sulfur in their barrels. Today it appears in wine, dried fruit, packaged foods — and virtually all raw shrimp in international trade.

Why shrimp needs it

Within hours of harvest, shrimp develop melanosis: black spots caused by the same enzymatic reaction that browns a cut apple. Melanosis is completely harmless, but it makes premium shrimp look spoiled and destroys commercial value. Metabisulfite blocks the enzyme responsible.

The application is simple and standardized: shrimp are dipped in a roughly 2% solution for about 10 minutes at harvest, and the treatment may be repeated at the processing plant. The compound stays overwhelmingly on the exterior — shell and head — with only a small fraction reaching the edible meat.

What regulators say

  • US FDA: permitted, with a limit of 100 ppm in the edible portion of raw shrimp.
  • European Union (EFSA): permitted, limit of 150 ppm in the edible part.
  • Codex Alimentarius (the FAO/WHO global food standard): approved for exactly this use.
  • China: technically permits similar levels in edible meat — but since late 2025 its customs laboratories measure shells and heads too, which mechanically raises readings without changing what consumers actually eat.

Who should be cautious

One real caveat exists: sulfite sensitivity. Roughly 1% of the population — primarily people with asthma — can react to sulfites with respiratory symptoms. This is why sulfites above 10 ppm must be declared on labels in the US, EU and most markets. For everyone else, sulfites at permitted concentrations are metabolized and excreted without harm; EFSA and the FDA have reviewed the compound repeatedly and maintain its approval.

So what is the China dispute really about?

Methodology, not safety. Ecuador’s shrimp meets EU and US standards for the edible part — the part people consume. The rejected lots reflect a measurement change (including shells and heads in the analysis), not evidence that the product became hazardous. No food safety authority outside this dispute has flagged Ecuadorian shrimp as unsafe, and exports to the EU and US continue growing at double-digit rates.

Practical guidance for buyers
